Lemon Pancakes
These lemon pancakes have a bright, sunny flavor from fresh lemon juice and lemon zest. They’re extra fluffy with golden edges and pair beautifully with summer berries, whipped cream, or maple syrup.

I’ve been thinking about this lemon pancake recipe for a while. I wanted something simple but a little different from your everyday pancakes—something that tastes like sunshine. These do just that: a delicate, fresh lemon flavor balanced by a touch of butter and a light, tender crumb.
Lemon Pancake Recipe

The lemon flavor comes from two simple ingredients: freshly squeezed lemon juice and finely grated lemon zest. Meyer lemons and regular lemons both work well—Meyers are sweeter and more floral, while regular lemons offer a brighter citrus note. Avoid bottled lemon juice if you can; fresh juice gives a cleaner, fresher taste and avoids bitterness.
Beyond lemon, this batter gets richness from melted unsalted butter and a little granulated sugar to encourage golden edges and add subtle sweetness. Vanilla extract rounds out the flavor. The pancakes in this recipe are intentionally thick and fluffy; if you prefer thinner pancakes, reduce the flour slightly to about 2 cups.

Tips for Best Results
- Bring ingredients to room temperature so the batter mixes evenly. To speed this up, sit the eggs on the counter for 10–15 minutes and warm the milk briefly on low power for 10–20 seconds.
- Do not overmix the batter. A few small lumps are fine—overworking develops gluten and makes pancakes tougher.
- Grease the griddle or frying pan with a neutral oil instead of butter; oil tolerates higher heat and won’t burn as easily.
- If the pancakes brown too quickly but remain undercooked inside, lower the heat. Medium-low heat helps them cook through without burning.
These lemon pancakes are wonderful for breakfast or a leisurely brunch. Serve with fresh berries, whipped cream, yogurt, or a drizzle of syrup. They feel a bit more special than plain pancakes but are just as easy to prepare.

Prep: 10 mins | Cook: 5 mins | Total: 15 mins | Servings: 16 pancakes
Ingredients
- 2 1/4 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups milk* (buttermilk preferred)
- 1/2 cup fresh lemon juice (about 2–3 lemons)
- 2 large eggs
- 2 tsp vanilla extract
- 3 tbsp unsalted butter, melted
- 1/4 cup granulated sugar
- 2 tbsp lemon zest (finely grated)
Instructions
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- Combine the milk and lemon juice in a separate bowl or measuring cup and let sit for a minute—this creates a slightly thickened, tangy base similar to buttermilk.
- In another bowl or liquid measuring cup, whisk the eggs with vanilla extract, melted butter, granulated sugar, and lemon zest until blended.
- Whisk the milk-lemon mixture into the egg mixture until combined.
- Gently fold the wet ingredients into the dry ingredients until just combined. Small lumps are okay—do not overmix.
- Heat a griddle to about 350°F (or set a frying pan to medium-low). Lightly grease with a neutral oil or nonstick spray.
- Scoop about 1/4 cup of batter per pancake onto the griddle. Cook until bubbles form on the surface and the edges look set, then flip and cook until golden on the second side.
- Repeat with the remaining batter, keeping cooked pancakes warm in a low oven if desired.
Notes
- *Buttermilk is preferred for an extra-tender texture, but milk mixed with lemon juice also works well.
- For thinner pancakes, use 2 cups of flour instead of 2 1/4 cups.
These lemon pancakes make a bright, flavorful change from classic pancakes and are quick enough for any morning. Enjoy them with seasonal fruit, a dollop of whipped cream, or a simple syrup of your choice.
