I recently experimented with a homemade version of Reese’s-style cups and learned something fun: the same basic filling can be turned into classic Buckeyes or shaped for seasonal treats. Being from the Buckeye state, that idea made these even more appealing. The filling is thick and satisfying thanks to medjool dates, but there’s also a quick updated option without dates if you prefer.

I try to eat plenty of fruits and vegetables, but I also love a small sweet after meals. These peanut butter cup truffles became my go-to indulgence. The dates (or a small amount of flour in the alternative version) give the filling just the right texture to roll and coat, and a touch of maple syrup enriches the flavor without overpowering the peanut butter.

These easy peanut butter cup truffles are a no-bake way to enjoy the classic peanut butter and chocolate combination. They can be made into truffles, Buckeyes, or seasonal shapes like Easter eggs.

Ingredients

For the center

  • 1 cup natural creamy peanut butter
  • 1/4 cup 100% pure maple syrup (optional — adds richness)
  • 2–3 pitted medjool dates

For the coating

  • 3/4 cup dark chocolate chips
  • 2 tablespoons milk of choice

Instructions

  1. Prepare the filling: In a food processor, pulse the pitted medjool dates until they break down into small pieces. Process until relatively smooth.
  2. Add the peanut butter and maple syrup to the dates and process again until the mixture is thick, uniform, and easy to shape. If you prefer not to use dates, see the notes for an alternative method using a small amount of flour.
  3. Roll the filling into balls at the size you prefer. Place them on a parchment-lined tray.
  4. Freeze the balls for about 30 minutes to firm them up. This makes dipping easier and helps the coating set cleanly.
  5. Make the chocolate coating using a double boiler method: bring an inch of water to a simmer in a small saucepan, then set a heatproof bowl over the pan. Add the dark chocolate chips and milk to the bowl and stir constantly until the chocolate is fully melted and smooth. Remove from heat.
  6. To make truffles: use a fork or dipping tool to fully coat each chilled peanut butter ball in chocolate. Place them back on parchment paper and refrigerate for about one hour, or return to the freezer to set more quickly.
  7. To make Buckeyes: use a toothpick to pick up each peanut butter ball, dip only the bottom half into the melted chocolate, and set on parchment. Cool until the chocolate firms up.
  8. Store finished truffles in the refrigerator for best texture, or freeze briefly if you prefer a firmer treat. Bring to room temperature a few minutes before serving if desired.

Notes

Updated version without dates: Instead of blending dates, stir 2–3 tablespoons of flour into the peanut butter along with a couple of tablespoons of maple syrup. Mix until thick enough to roll into balls; you may want to chill the mixture for about 15 minutes before shaping. For Easter, flatten the balls into egg shapes before coating or chilling.
