For this version I combined tender spinach with creamy ricotta and sharp Parmesan, then tucked the mixture into a simple pastry braid. The method is forgiving: even if your cuts aren’t perfect, the final braid still looks impressive. The recipe below includes straightforward tips to help you assemble and bake the braids with confidence.

The filling relies on a few simple ingredients that combine for great flavor and texture:

- Baby spinach (about 3 ounces, raw and roughly chopped)
- Ricotta cheese (¾ cup)

- Ground black pepper (1 teaspoon)

How Do You Make a Puff Pastry Braid?

Unfold and lightly press each puff pastry sheet flat on a cutting board. You’ll notice three natural sections from the folding lines; the center panel is where the filling goes. Using a pastry or pizza cutter, slice vertical strips in the left and right panels up to the center. Aim for strips about ⅓”–½” wide. Consistency helps the final look but small variations are fine.
Spoon the filling onto the center panel, spreading it evenly and leaving a small margin at the top and bottom. Starting from the bottom, fold the first strip from one side across the filling, then fold a strip from the opposite side across it. Continue alternating sides, slightly overlapping the strips at an angle to create a braided pattern. If you end up with uneven strips near the top, fold two short strips together—no one will notice. Press the final edge gently to seal.

- ½ large onion (or 1 medium), chopped

Instructions
- Preheat the oven to 400°F (200°C).
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 3–4 minutes.
- Add the chopped spinach and pepper. Stir while heating; when the spinach begins to wilt, reduce heat to low, cover, and cook until the spinach is fully softened, about 5–7 minutes. Stir occasionally to prevent sticking. Remove from heat and cool slightly.
- In a mixing bowl, combine the ricotta and Parmesan. Stir until smooth and set aside.
- On a lightly floured board, unfold a puff pastry sheet and gently flatten. Cut vertical strips into the left and right panels up to the center using a pastry or pizza cutter, leaving the center panel intact for the filling. Repeat with the second sheet.
- Mix the cooled spinach mixture into the ricotta-Parmesan mixture. Spread half of the filling down the center of each pastry sheet, leaving small margins at top and bottom.
- Starting from the bottom, fold the first strip from one side across the filling, then fold the opposite strip over it. Continue alternating sides and slightly overlapping strips at a diagonal to form a braid. Press the ends gently to seal.
- Line a baking sheet with parchment paper and place the braids on it. Bake in the preheated oven for 18–23 minutes, until the pastry is golden and puffed. Allow to cool for about 10 minutes before slicing and serving.
Notes
- Serve the braid as a main course with a salad, or slice it as a side to complement other dishes.
- To reheat, an air fryer or toaster oven works well to restore crispness. Avoid microwaving if possible, as it can make the pastry soggy.
