1 very ripe banana
1/3 cup unsweetened applesauce

2 large eggs
1 1/2 cups almond flour
1 1/2 tsp ground cinnamon
1/4 tsp ground cloves
1 tsp baking soda
1 tsp baking powder
1/4 tsp sea salt
1/2 cup apple, finely chopped (about 1/2 a medium apple)
Instructions
1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners. If you prefer regular muffins, use a standard muffin tin instead.
2. In a blender or food processor, add the banana, applesauce, solid coconut oil, pitted dates, eggs, almond flour, cinnamon, cloves, baking soda, baking powder, and salt. Blend until the mixture forms a smooth, uniform batter with no large date pieces remaining.
3. Transfer the batter to a bowl and gently fold in the finely chopped apple. Stir just enough to distribute the apple pieces evenly without overmixing.
4. Spoon about 1 1/2 tablespoons of batter into each prepared mini muffin cup. If using liners, cleanup will be easier and muffins will release cleanly. Optionally, press a small apple chunk into the top of each muffin for a decorative finish.
