It’s the kind of dish that makes a house feel like home.

This recipe requires time more than technical skill. The broth is slow-cooked to extract maximum flavor; the soup itself comes together quickly once the stock is ready. Think of it as a slow, hands-off way to create something deeply satisfying.

How to Make Caldo de Pollo (Cómo Hacer Caldo de Pollo)

The process has two stages: first you make the broth, then you finish the soup.

STEP 1. Make the broth

For the broth you will need:

  • Chicken — a whole roasting chicken, giblets removed
  • Onions
  • Garlic
  • Carrots
  • Jalapeños
  • Cider vinegar
  • Cilantro
  • Dried chile peppers — optional (guajillo or ancho recommended)

Place all broth ingredients in a large stockpot, countertop roaster, or slow cooker. Cover with water by about 1 inch and cook gently for about 8 hours, or until the chicken is so tender it falls apart. Remove solids with a slotted spoon and strain the broth through a fine-mesh sieve or cheesecloth-lined colander. Chill the strained broth briefly in an ice bath so the fat separates; skim the fat off or refrigerate overnight and remove the solidified fat. Discard the spent vegetables and reserve the chicken for the soup.

STEP 2. Make the soup

For the finished soup you will need the reserved chicken and additional vegetables:

  • Additional carrots
  • Potatoes (Yukon Gold recommended)
  • Kosher salt

Add the strained broth to a large pot with diced potatoes and carrots and 2 teaspoons kosher salt. Bring to a boil, then reduce to a simmer until the vegetables are tender, about 20 minutes. While the vegetables cook, remove the meat from the reserved chicken, discarding skin and bones. Shred or chop the chicken into bite-sized pieces and add to the pot to warm through. Taste and adjust seasoning with additional salt as needed.

How to Serve Caldo de Pollo

Serve each bowl with a bright, fresh garnish: a cilantro-onion mixture tossed with lime juice, thin slices of fresh jalapeño, avocado cubes and lime wedges. Place the garnishes on the table so guests can top their bowls to taste. Cook’s Notes

  • You can make the broth in a stockpot, countertop roaster or slow cooker. A countertop roaster is convenient for making larger batches.
  • Vegetables used in the broth develop flavor but become very soft after hours of simmering; they’re best discarded or composted rather than served in the finished soup.
  • Skimming fat is easiest after refrigerating the strained broth overnight, when the fat solidifies on top and can be lifted off.
  • Let the chicken cool slightly before shredding; the time it takes the soup vegetables to become tender is usually sufficient to prepare the meat and the fresh garnishes.
  • Tossing the diced onion with lime juice both flavors it and tones down raw bite — don’t skip that step.
  • Avocado is optional but excellent. Extra lime wedges at the table brighten every serving.

Ingredients

For the Broth

  • 1 large whole roasting chicken, giblets removed
  • 3 large carrots, scrubbed and trimmed
  • 2 large onions, peeled and halved
  • 10 cloves garlic, peeled but left whole
  • 3 fresh jalapeño peppers, scrubbed and pierced
  • 2 stems cilantro
  • 2 tablespoons cider vinegar
  • Optional: 2 dried chile peppers (guajillo or ancho), wiped clean

For the Soup

  • 1 batch strained broth
  • 3 Yukon gold potatoes, scrubbed and diced into 1/4-inch cubes
  • 2–3 carrots, scrubbed and diced into 1/4-inch cubes
  • 2 teaspoons kosher salt (plus more to taste)
  • Meat from the cooked chicken, shredded

For the Garnish

  • 1 large sweet or mild white onion, peeled and finely diced
  • 3 limes (juice of 2, plus wedges)
  • 1/2 teaspoon kosher salt
  • Handful cilantro leaves, coarsely chopped
  • 1 fresh jalapeño, thinly sliced into rounds
  • 1 ripe avocado, halved, pitted and cubed

Instructions

To Make the Broth

  • Combine all broth ingredients in a large pot or slow cooker and add water to cover by about 1 inch. Simmer gently for about 8 hours, until the chicken is falling-apart tender.
  • Remove solids with tongs or a slotted spoon. Strain the broth through a fine mesh sieve or cheesecloth-lined colander. Chill briefly in an ice bath and skim off fat, or refrigerate overnight and remove solidified fat. Reserve the cooked chicken and discard the spent vegetables.

To Make the Soup

  • Add the strained broth, diced potatoes, diced carrots and 2 teaspoons kosher salt to a large pot. Bring to a boil, then reduce heat and simmer 20 minutes until vegetables are tender.
  • While the vegetables cook, shred the reserved chicken meat and discard bones and skin. Add the shredded chicken to the pot to warm through. Taste and adjust seasoning with additional salt if needed.

To Make the Cilantro-Onion Garnish

  • Toss the diced onion with the juice of two limes and 1/2 teaspoon kosher salt. Let sit at room temperature for 10 minutes, then stir in the chopped cilantro.

To Serve

  • Ladle soup into bowls and pass the garnishes. Top each serving with a scoop of the cilantro-onion mixture, a few jalapeño rings, avocado cubes and a lime wedge.
