  • 2 cups pure pumpkin purée (not pumpkin pie filling)
  • 15 ounces full-fat coconut milk
  • 1 1/2 cups vegetable broth
  • 1/2 cup onion, cut into quarters

How To Make Pumpkin Bisque In The Slow Cooker

Slow Cooker Method

  1. Place all ingredients into the slow cooker and stir to combine.
  2. Cook on HIGH for 2–3 hours or LOW for 4–6 hours, until the flavors are well melded and the onion is softened.
  3. Allow to cool briefly, then blend until silky smooth using an immersion blender, countertop blender (in batches), or food processor.
  4. Taste and adjust seasoning as needed. Serve warm with a drizzle of coconut milk or fresh herbs.

Instant Pot Method

  1. Select the Sauté function and heat 1 tablespoon of oil. If using bacon, cook bacon until crisp, remove and drain most of the grease.
  2. Add the onion to the hot pot and sauté 2–3 minutes until starting to soften. Add garlic and cook another minute, then turn off Sauté.
  3. Pour in the vegetable broth and deglaze the bottom by scraping any browned bits with a wooden spoon. Add pumpkin purée, coconut milk, spices, and cooked bacon (if using).
  4. Close the lid, seal the valve, and cook on High Pressure for 8 minutes. Allow a 5-minute natural release, then release any remaining pressure manually.
  5. Blend the soup until smooth with an immersion blender or in batches in a countertop blender.
