Homemade Rose and Cardamom Barfi Recipe

With Diwali approaching, I will be sharing several easy festival sweets over the coming weeks. This year’s celebrations feel different for me — it will be my first Diwali without my mother, and I expect it will be a quiet, reflective holiday. Even so, I want to share recipes so others can celebrate with cheer and delicious homemade sweets.

Last year my paan coconut ladoo recipe became very popular during Diwali and many readers told me how much they enjoyed it. That experience reminded me how much people appreciate simple, reliable recipes that taste great and are easy to make. This double-layer Rose Cardamom Burfi follows that same spirit: straightforward ingredients, minimal fuss, and impressive results.

The burfi has two distinct layers: a cardamom-flavored base and a rose-flavored top. Both layers are made using milk powder, butter, milk and powdered sugar. The cardamom layer is spiced with ground cardamom, while the rose layer gets its color and flavor from rose syrup and a touch of rose water. I used Rooh Afza rose syrup for the rose layer; you can use any rose syrup you prefer. The recipe is inspired by a simple chocolate burfi I shared earlier, and follows the same easy approach using pantry-friendly ingredients.

I tested this recipe more than once to get the rose intensity and texture right. The first batch was tasty but the rose flavor wasn’t strong enough, so I adjusted the syrup and rose water and tried again. If you make it at home, feel free to tweak the rose water or syrup to suit your personal taste.

Method

Start by making the cardamom layer. In a pan over medium heat, add the butter and milk. When the butter melts, stir in the milk powder until it is well combined. Cook for about a minute, then add powdered sugar and cardamom powder and mix well. The mixture may thin at first; continue cooking on a low to medium flame for 3–4 minutes, stirring constantly, until it thickens and begins to leave the sides of the pan.

Remove the pan from heat and spread the cardamom mixture onto parchment paper or a well-greased plate. Using a spoon dipped in ghee to prevent sticking, flatten the mixture into an even square. Allow this layer to set while you prepare the rose layer.

For the rose layer, return the pan to medium heat and add butter, the rose syrup and rose water with the milk. Stir until the butter melts, then add milk powder and cook for a minute. Add powdered sugar and continue cooking for 4–5 minutes on low heat, stirring frequently, until the mixture thickens and comes away from the sides of the pan.

Carefully pour the rose mixture over the set cardamom layer and spread evenly with the back of a spoon dipped in ghee. Let the burfi cool and set for a few hours at room temperature, or chill in the refrigerator for about an hour to speed up setting. Once firm, trim the edges for clean squares and cut into 12 pieces.

Store the burfi refrigerated and consume within 3–5 days. For an elegant finish, you may top each piece with edible silver leaf (chandi ka vark) if desired.

Ingredients

Cardamom layer

  • 4 tablespoons unsalted butter
  • 1/4 cup + 3 tablespoons milk
  • 1.5 cups milk powder
  • 3/4 cup powdered sugar (confectioners’ sugar)
  • 1/2 teaspoon cardamom powder

Rose layer

  • 4 tablespoons unsalted butter
  • 1/4 cup rose syrup (I used Rooh Afza)
  • 3 tablespoons milk
  • 1.5 cups milk powder
  • 3/4 cup powdered sugar
  • 1–2 teaspoons rose water (adjust to taste)

Instructions

Make the cardamom layer

  1. In a pan over medium heat, melt butter with milk. Add milk powder and stir until combined.
  2. Add powdered sugar and cardamom powder; the mixture will thin. Cook on low-medium heat for 3–4 minutes, stirring constantly, until it thickens and leaves the sides of the pan.
  3. Pour onto parchment or a greased plate and flatten into a square using a spoon dipped in ghee. Allow to set while preparing the rose layer.

Make the rose layer

  1. In the same pan, combine butter, milk, rose syrup and rose water. Stir until butter melts, then add milk powder and cook for one minute.
  2. Add powdered sugar, then cook on low heat for 4–5 minutes, stirring, until the mixture thickens and comes away from the pan sides.
  3. Pour the rose mixture over the cardamom layer and spread evenly. Let set at room temperature for a few hours or chill for about one hour.
  4. Trim edges and cut into 12 squares. Refrigerate and consume within 3–5 days.
