Ingredients

  • 4 jalapeño peppers
  • 1 1/2 cups shredded cheddar cheese, plus extra for topping
  • 2 pounds lean ground beef
  • 2 teaspoons salt
  • 6 hamburger buns (or lettuce leaves for wraps)
  • 1 onion, sliced
  • 1 head romaine lettuce, leaves separated

Instructions

  1. Preheat your oven broiler to high.
  2. Place the whole jalapeños on a foil-lined baking sheet in a single layer.
  3. Set the baking sheet on the highest rack and broil the peppers until the skins blacken and blister on one side.
  4. Remove the sheet and turn the jalapeños, broiling until all sides are charred.
  5. When the jalapeños are evenly charred, transfer them to a bowl and cover tightly with plastic wrap to steam; let sit about 5 minutes.
  6. After steaming, peel the skins off the jalapeños — the skin should come away easily.
  7. Finely chop the peeled jalapeños. If you prefer less heat, remove the ribs and seeds before chopping.

  9. In a large bowl, combine the ground beef, chopped jalapeños, shredded cheddar, and 2 teaspoons salt.

  11. Form the mixture into six even patties.
  12. Grill the patties over medium-high heat or cook in a hot skillet. Flip once and cook until done to your preference. In the last few minutes of cooking, top each patty with a little extra cheddar to melt.
