The Dough

For sauce, choose what you like best—pizza sauce, marinara, or a chunky tomato sauce. If your sauce is very thick, thin it slightly with a tablespoon or two of warm water so it spoon-pours easily into each cup without overwhelming the meatball. A chunky marinara works well if you prefer some texture, while a smooth pizza sauce gives a classic flavor.
Keep the sauce portion small—about a tablespoon per cup—so the crust stays crisp. After baking, you can add a touch more sauce and a sprinkle of grated cheese or a dollop of ricotta if you want an extra-rich finish.

Serve It With A Salad

Ingredients
- 1 lb ground beef
- 1 cup crushed crackers (such as saltines)
- 1 cup powdered Parmesan cheese
- 2 tablespoons dried parsley
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon garlic powder
- 1/2 cup minced onion
- 1 tablespoon onion powder
- 1 tube pizza dough (store-bought)
- 1 cup pizza sauce or marinara (plus extra for serving)
- Dried parsley or chopped fresh parsley for garnish
Instructions
- Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin with nonstick spray or a light coating of oil.
- In a bowl, combine the ground beef, crushed crackers, powdered Parmesan, dried parsley, salt, pepper, garlic powder, minced onion, and onion powder. Mix until just combined.
- Form the mixture into twelve 1½-inch meatballs.
- Roll out the pizza dough and cut twelve 3-inch rounds with a cookie cutter or rim of a glass. Alternatively, cut 3-inch squares if needed.
- Press each dough round into an individual muffin cup, pushing the dough up the sides to form a small cup.
- Place one meatball into each dough cup. Spoon roughly 1 tablespoon of sauce over each meatball.
- Bake at 350°F for about 35 minutes, until the meatballs are cooked through and the dough is golden brown.
- Remove from the oven and, if desired, add more sauce and a sprinkle of ricotta, mozzarella, or additional Parmesan. Garnish with dried or fresh parsley.
