Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 large white onion, sliced
  • Kosher salt, to taste
  • 3 cloves garlic, roughly chopped
  • 1 tablespoon smoked paprika (optional)
  • 1 quart chicken stock
  • 3 medium Japanese yams (or yellow potatoes / white-fleshed sweet potatoes)
  • 1.5 quarts water
  • 1 pound collard greens, stems removed and leaves very thinly sliced
  • 8 ounces cured chorizo sausage, casing removed and very thinly sliced (or chouriço / linguiça)
  • Freshly cracked black pepper, to taste

Instructions

  1. Preheat a large stockpot over medium heat. Add the olive oil and heat until shimmering. Add the sliced onion and a pinch of salt. Cook, stirring occasionally, until the onion is soft and translucent, about 10 minutes.
  2. Add the chopped garlic and cook, stirring, for about 60 seconds. If using, stir in the smoked paprika and cook for another minute to bloom the spice.
  3. Add the chicken stock, the peeled and chopped yams, and enough water to cover the vegetables. Increase the heat to high, bring to a steady simmer, then cover and cook until the yams are fork-tender, about 10 minutes.
  4. Remove the pot from the heat. Using an immersion blender (or a regular blender in batches), puree the soup until completely smooth and velvety. If the soup is too thick, add additional water or stock a little at a time to reach your desired consistency.
  5. Return the pot to a gentle simmer, then add the thinly sliced collard greens and the sliced chorizo. Cook, stirring occasionally, until the greens are just tender and the sausage has warmed through, about 8 minutes.
  6. Taste and adjust seasoning with salt and freshly cracked black pepper. Serve immediately while hot, making sure each bowl has a balance of creamy broth, greens and sausage slices.
