Crispy Restaurant-Style Sesame Chicken Recipe

Sesame Chicken is a familiar favorite on many Chinese restaurant menus. When we lived in the Eastern United States, we enjoyed it often—dining in and ordering it as part of our go-to takeout meals. Since relocating to the Southwest, Chinese restaurants are fewer and our low‑carb lifestyle has cut back on dishes made with wheat-based breading, like traditional Sesame Chicken. That’s why a lighter, low‑carb version feels like a real treat.

Crunchy low carb sesame chicken

Joanie recently surprised me with a crisp, low‑carb Sesame Chicken that stands up to a warm, glossy sesame sauce without becoming soggy. She served it the classic way with steamed broccoli on the side. She doubled this recipe so we’d have plenty for leftovers—lunch the next day was already taken care of.

Ingredients

We prefer white meat, so Joanie used boneless chicken breasts cut into approximately 1‑inch cubes for quick, even cooking. If you like a richer flavor, boneless skinless thighs also work well. Small pieces cook fast and stay tender—that quick‑cooking technique is a hallmark of great Chinese‑style dishes.

For the coating Joanie tested several low‑carb flours. Almond flour tends to be coarse and can resist saucy glazes. Coconut flour can become gummy because it absorbs moisture. Lupin flour is closer to wheat in texture. To get the extra crunch and a puffy, resilient crust that holds up under a warm sesame sauce, she used unflavored whey protein isolate mixed with a bit of garlic powder and ground ginger. We’ve used whey protein in other recipes to add lift and to keep a tender but crisp coating when finished with sauce.

Preparation Tips

Breading the small chicken cubes is the most time‑consuming step because there are many pieces to coat. Set up an assembly line with one plate for the dry mix and a shallow bowl for the egg wash. Pat the chicken dry and bring it to room temperature so the coating adheres well. Work in small batches when frying so the oil temperature stays hot and the pieces crisp quickly. If you prefer, you can fry the breaded chicken ahead of time and reserve it so the final saucing step takes only a minute or two.

The sauce is easy to whisk together ahead of time (hold the thickener back until the final cooking). Bring the sauce to a simmer over medium‑high heat and add a small amount of thickener—Xanthan Gum is effective but a little goes a long way; it will thicken as it cools. If you prefer a natural starch, arrowroot is an acceptable alternative.

Ingredients

  • Sesame Chicken
  • 24 ounces Chicken breast, cut into 1 1/2 inch cubes

  • 1/4 teaspoon Sea salt

  • 1/4 teaspoon Black pepper

  • 2 Eggs, beaten for egg wash

  • 1/2 cup Whey protein isolate powder, unflavored

  • 1/4 teaspoon Garlic powder

  • 1/8 teaspoon Ground ginger

  • 1/4 cup Peanut oil (or other high‑heat oil)

  • 2 tablespoons Sesame seeds, toasted

  • 2 stalks Green onion, sliced on the bias

  • Sesame Chicken Sauce
  • 1/3 cup Chicken broth

  • 4 tablespoons Coconut aminos (or soy sauce)

  • 4 tablespoons Rice wine vinegar

  • 1 1/4 teaspoons Five‑spice powder

  • 3 teaspoons Sesame oil

  • 1 1/4 teaspoons Fish sauce

  • 1/3 teaspoon Red pepper flakes

  • 6 tablespoons Allulose (or preferred low‑carb sweetener)

  • 1/4 teaspoon Xanthan gum (use sparingly)

Instructions

  • Sesame Chicken
  • Season the chicken cubes with sea salt and pepper and set aside.
  • Combine the whey protein, garlic powder, and ground ginger on a shallow plate. In a second shallow bowl, beat the eggs to make an egg wash.
  • Working in batches, dip each chicken piece into the egg wash, then coat with the whey protein mixture. Heat the peanut oil (or other high‑heat oil) in a wok or heavy skillet over medium‑high heat. Shake off excess coating and fry the pieces for about 4 minutes, turning once, until golden and cooked through. Transfer to a plate.
  • Sesame Chicken Sauce
  • Whisk all sauce ingredients (except the xanthan gum) together in a bowl.
  • Bring the sauce to a simmer in a skillet for 2–3 minutes, then sprinkle in a small amount of xanthan gum while whisking and cook another 1–2 minutes until the sauce thickens to your liking.
  • Toss the cooked chicken in the sauce for about 1 minute to coat. Plate and garnish with toasted sesame seeds and sliced green onion. Serve immediately.

Chef’s Notes

  • Serve with blanched broccoli or a low‑carb cauliflower fried rice for a complete meal.
