About the Tuna

The most important factor for any raw tuna dish is freshness. Buy sashimi-grade ahi from a reputable fish market and confirm that it is safe to eat raw. Texture and color should look fresh and firm; if the tuna seems off, return it and find another source. When tuna is fresh, the flavor and texture make all the difference in a simple tartare-style mixture.

Why Baked Wonton Cups

Baked wonton cups are quick, light, and less oily than deep-fried versions. With a few pantry staples and a mini muffin tin, you can make a batch in minutes. Using thin wonton wrappers (often labeled “Hong Kong Style”) produces a delicate, crispy shell that complements the tender tuna filling. For a polished presentation, cut wrapper rounds before baking so every cup has a neat rim.

Tips for Perfect Wonton Cups

  • Use a small cookie cutter to trim the wonton wrappers into circles for a tidy finish.
  • Stack several wrappers and cut them at once for speed and consistency.
  • Lightly brush wrappers with a small amount of oil (a blend of sesame and olive oil works well) to help them brown evenly.
  • Spray the mini muffin tins with cooking oil to prevent sticking, and gently press the wrappers into the tins with your fingers so they form uniform cups.
  • Bake until crisp and only lightly browned; thin wrappers usually take about 5 minutes at 350°F (175°C).
  • Wonton cups can be made ahead and re-crisped in a warm oven for a few minutes before serving.

Ingredients

Baked Wonton Cups

  • 20 thin wonton wrappers (sometimes labeled “Hong Kong Style”)
  • Cooking oil spray
  • 1 teaspoon sesame oil
  • 1 teaspoon olive oil

Tuna Tartare

  • 1/2 pound ahi tuna, sashimi fresh
  • 4 teaspoons mirin
  • 1 tablespoon sesame oil
  • 2 teaspoons soy sauce
  • 2 tablespoons scallions, finely minced
  • 1–2 teaspoons sriracha sauce, to taste
  • Toasted sesame seeds, for garnish

Instructions

Baked Wonton Cups

  1. Preheat the oven to 350°F (175°C). Lightly spray mini muffin tins with cooking oil spray.
  2. In a small bowl, combine the sesame oil and olive oil. Stack 5–10 wonton wrappers and use a 3″ round cookie cutter as a guide to trim circles. Lightly brush each wrapper circle with the oil mixture.
  3. Place one wrapper circle into each muffin tin. Use two fingers from each hand to gently press the wrapper into the bottom and sides of the tin so it forms a cup.
  4. Bake for about 5 minutes, or until the cups are crisp and just starting to turn golden. Thicker wrappers may require a bit more time.

Tuna Tartare

  1. Finely dice the ahi tuna and place it in a medium bowl.
  2. Add mirin, sesame oil, soy sauce, 1 tablespoon of the minced scallions, and sriracha (start with 1 teaspoon and add more if you like it spicier). Mix gently to combine.
  3. Refrigerate the mixture until ready to serve.

To Serve

  1. Spoon the tuna tartare into the cooled wonton cups just before serving.
  2. Garnish with the remaining scallions and a sprinkle of toasted sesame seeds.

Make-Ahead and Serving Suggestions

You can prepare the baked wonton cups a day or two ahead and store them in an airtight container. Re-crisp them in a warm oven for a few minutes if needed. Mix and chill the tuna tartare ahead of time, but fill the cups right before serving to keep them crisp. These bites pair well with cold sake, crisp white wine, or as part of a larger appetizer spread.
