Easy Double Chocolate Bark with Cranberries and Pistachios

Ingredients

  • 12 oz good quality dark chocolate, chopped
  • 12 oz good quality white chocolate, chopped
  • 1/2–3/4 cup dried cranberries
  • 1/2–3/4 cup pistachios, unsalted and roasted (chopped if desired)
  • 1/4 tsp salt
  • 3–4 tbsp crushed candy canes

Instructions

  1. Line a baking sheet with parchment or wax paper, or use a silicone mat. Set aside.
  2. In a microwave-safe bowl, add the chopped dark chocolate. Heat in 30-second intervals, stirring between each interval, until the chocolate is glossy and mostly smooth. If a few lumps remain, stir until they melt from residual heat.
  3. Pour the melted dark chocolate onto the prepared pan and spread into a rectangle about 11×15 inches with a spatula. Tap the pan gently to release any air bubbles. Chill in the refrigerator until the dark chocolate is set.
  4. Repeat the melting process for the white chocolate. Once the dark chocolate layer is firm, pour and spread the white chocolate over it. Work quickly so the white layer sets smoothly.
  5. Mix the dried cranberries, pistachios, and salt in a small bowl. Sprinkle the mixture and the crushed candy canes evenly over the top of the white chocolate. Chill for about 30 minutes or until fully set and firm.
  6. When fully set, lift the bark from the pan and use a sharp knife to cut into pieces, or break it by hand for a rustic look. Store in an airtight container.

Notes

No microwave? Use a double boiler: bring 1–2 inches of water to a gentle simmer in a small saucepan. Place a heatproof glass or metal bowl over the pot, making sure the bottom of the bowl does not touch the water. Add the chopped chocolate to the bowl and stir until melted. Repeat for each chocolate.
