Common retailers that carry almond flour include warehouse clubs and natural-food stores, and the availability will vary by region.

Baking Tips
- For easier cleanup: Line the loaf pan with parchment paper or spray it lightly with cooking spray before adding the batter.
- Prevent over-browning: If the top is getting too dark while the center still needs time, loosely tent the loaf with aluminum foil for the last 15 to 20 minutes of baking.
- Don’t over-mix: When you combine dry and wet ingredients, stir just until the batter is mostly uniform. Over-mixing can make the crumb heavy.
- Cooling: Allow the bread to cool in the pan for at least an hour so it sets and slices cleanly. Run a knife around the edges before inverting the loaf onto a cooling rack.

- 3 ripe bananas, mashed
- 3 eggs, beaten
- 3 Tbsp. honey or pure maple syrup
- 2 tsp. pure vanilla extract
Dry Ingredients
- 2 1/2 cups almond flour*
- 1 tsp. baking soda
- 2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/2 tsp. salt
- 1/4 cup chopped walnuts, pecans, or dark chocolate chips
Instructions
- Preheat the oven to 350ºF. Grease a 9×5-inch loaf pan or line it with unbleached parchment paper.
- In a large bowl, mash the bananas until mostly smooth. Whisk in the beaten eggs, then stir in the honey (or maple syrup) and vanilla until combined.
- In a separate bowl, combine the almond flour, baking soda, cinnamon, nutmeg, and salt. Add the dry mixture to the banana mixture and stir until almost combined. Fold in the chopped nuts or chocolate chips, taking care not to over-mix.
- Pour the batter into the prepared loaf pan and bake 50–60 minutes, until the center is firm when gently jiggled and a toothpick inserted in the middle comes out mostly clean. If the top browns too quickly, loosely cover with foil for the last 15–20 minutes.
- Run a knife around the edges of the pan to loosen the loaf and let it cool in the pan for at least one hour. Invert the loaf onto a wire rack and let it finish cooling before slicing.
- Store leftovers wrapped in plastic wrap or foil in the refrigerator for up to three days, or freeze the wrapped loaf or individual slices for two to three months.
