  • 4 large egg whites
  • 3/4 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract
  • 1 to 1¼ cups 2%-fat plain Greek yogurt
  • Drizzle of agave
  • A few pinches of lemon zest
  • Diced fresh fruit such as berries, grapes, and mango (optional)
Instructions
  1. Preheat and prepare: Line two large baking sheets with parchment paper. On the reverse side of the paper, draw four 4-inch circles on each sheet and then flip the paper so the markings won’t touch the meringue. Set aside.
  2. Beat the whites: In a large bowl, combine the egg whites and cream of tartar. Beat on medium speed until frothy. Gradually add the sugar, one tablespoon at a time, continuing to beat until the mixture forms stiff, glossy peaks, about 8–10 minutes. Stir in the vanilla extract.
  3. Shape the nests: Preheat the oven to 250°F (120°C). Divide the meringue evenly among the eight circles and use the back of a spoon to shape each into a shallow nest with half-inch sides to hold the filling.
  4. Bake and cool: Bake for 1 hour, rotating the baking sheets halfway through baking for even color. Turn the oven off and allow the meringues to cool inside the closed oven for 30 minutes to prevent cracking. Remove and cool completely on a wire rack.
  5. Prepare the topping and assemble: Stir the Greek yogurt with a drizzle of agave and a few pinches of lemon zest to taste. Fill each cooled meringue with an even portion of the yogurt mixture and top with diced fresh fruit as desired. Assemble just before serving to keep the meringues crisp.
