This is the easiest vegan roasted cauliflower steaks recipe. These tender, flavorful “steaks” are simply seasoned and roasted to perfection—an excellent plant-based main or side that’s healthy, satisfying, and quick to prepare.

How to Make This Recipe

1. Remove the outer leaves from the cauliflower by cutting off the stem as close to the head as possible without cutting away the florets. If a few leaves remain, you can trim them after slicing or leave them—they’re edible.

2. Place the cauliflower stem-side down on a cutting board. Slice each head into 3/4″ to 1″ thick slices to create “steaks.” The first couple of slices may crumble; those pieces are fine to roast alongside the steaks. Expect about three solid steaks per head.

3. Line a baking sheet with parchment paper. Arrange the cauliflower steaks and any smaller florets on the sheet in a single layer.

4. In a small bowl, whisk together olive oil with garlic powder, onion powder, and paprika. Brush the mixture over both sides of each cauliflower piece so they are evenly coated.

5. Roast in a preheated 420°F oven for about 30 minutes, flipping the steaks and smaller pieces halfway through to brown both sides. Roast longer for a crispier, deeper brown crust or shorten the time if you prefer a bit of bite.

6. When the cauliflower is done, sprinkle with fine sea salt and chopped parsley if desired, and serve immediately.

Buying the Right Cauliflower

  • Choose heads with tightly packed florets and vibrant green leaves.
  • Avoid cauliflower with large brown spots. Small blemishes can be trimmed away.
  • The head should feel relatively heavy and compact for its size.
  • Cauliflower is often lower on pesticide lists, so choose conventional or organic based on your preference.

Recipe Tips

Cut the steaks 3/4 to 1 inch thick. Thinner slices tend to fall apart during roasting. For extra browning and crispness, roast a few minutes longer; reduce time if you prefer a little crunch. Add red pepper flakes to the oil mixture for heat. For more flavor, top with vegan pesto, or drizzle with a maple-tahini dressing or similar tahini sauce.
