Easy Pork Mince Pasta with Vegetables — Kid-Friendly, Nutritious Family Meal

Ingredients
- 500 g pork mince
- 1 onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 carrot, grated
- 1 zucchini, grated
- 1 small red capsicum (bell pepper), finely chopped
- 3 mushrooms, finely chopped
- 1 can tomato soup
- Salt and pepper to taste
- Fresh parsley, chopped
- Optional: 1 cup beef stock (or use the empty soup can filled with water)
- Olive oil for cooking
Directions / How to Put It Together
- Heat a little olive oil in a large pot over medium heat. Add the chopped onion and garlic and cook, stirring, until softened and fragrant.
- Add the pork mince, season with salt and pepper, and cook, breaking it up with a spoon, until the meat is well browned.
- Stir in the grated carrot and zucchini, the diced capsicum and chopped mushrooms. Mix well and cook for about 4–5 minutes, until the vegetables begin to soften. Stir regularly to prevent sticking.
- Pour in the can of tomato soup. If you’re using powdered beef stock, rinse the empty soup can with water and add that water to the pot to make the stock; otherwise add one can of water. Stir to combine and bring to a gentle simmer.
- Reduce the heat to low and allow the mixture to simmer for about 45–60 minutes, stirring occasionally to prevent sticking. This slow simmer melds the flavors and softens the vegetables for little ones.
- Stir in the chopped fresh parsley just before serving.
- Serve spooned over cooked pasta and, if desired, top with a sprinkle of grated cheese.
