How to make this warm kale salad

  • Cook the quinoa: Rinse quinoa under cold water to remove any bitterness, then cook according to package directions. Fluff and set aside.
  • Make the cheesy tahini dressing: In a small bowl, whisk together tahini, nutritional yeast, garlic powder, paprika, lemon juice, salt and pepper. Gradually whisk in warm water a tablespoon at a time until the dressing reaches a pourable but creamy consistency. Taste and adjust seasoning.
  • Sauté onion and mushrooms: Heat a skillet over medium-high heat with a splash of olive oil. Sauté the sliced onion until translucent, then add the mushrooms.
