Time to up your burger game with this Fancy Beef Burger. This is a no-bun take on a timeless favorite, finished with fresh mozzarella, caramelized onions and a drizzle of balsamic reduction. Delicious!

This burger is seriously good. I don’t cook burgers all the time, but when I do, they need to be worth it—and this one is. It’s built without a bun, making it a hearty, satisfying plate on its own. If you prefer bread, serve it on a bun or with toasted rolls for extra heft.
Notes About The Burgers
- You can easily make smaller patties by halving the portion sizes. The recipe below yields patties roughly the size of quarter-pounders, so they’re fairly substantial.
- This recipe is written without buns, but buns work well if you want a traditional burger experience.
- For best flavor and texture, use 100% ground beef—leaner blends can be drier, and fattier mixes will be juicier.

Ingredients
- 1 lb ground beef
- 1 red pepper, very finely diced
- 1 onion, very finely diced
- Small bunch fresh chopped parsley
- 2 eggs
- 1/2 cup fine bread crumbs
- 3 tablespoons Worcestershire sauce
- 2 cloves garlic, crushed
- Salt and pepper to taste
- Olive oil for cooking
For the garnish:
- 1 onion, caramelized (see note below)
- Bunch of fresh spinach
- 4 slices fresh mozzarella
- 1 tomato, thinly sliced
- Balsamic reduction, to taste
Instructions
- In a large bowl, combine the ground beef, finely diced red pepper, finely diced onion, chopped parsley, eggs, bread crumbs, Worcestershire sauce, crushed garlic, salt and pepper. Mix gently until ingredients are evenly incorporated.
- Divide the mixture into 4 equal portions. Form each portion into a patty about 1 inch thick. Place patties on a sheet of wax paper, wrap tightly and refrigerate for at least 30 minutes—this helps them keep their shape during cooking.
- Heat a large skillet over medium-high heat and add a little olive oil. Cook the patties about 6 minutes per side for well-done; reduce the time if you prefer them medium or medium-rare. Gently press each patty while cooking to help them brown evenly.
- When cooked, transfer patties to serving plates. Top each with a slice of tomato, a slice of fresh mozzarella and a generous spoonful of caramelized onions. Serve spinach on the side and finish with a drizzle of balsamic reduction.
- Caramelize the onions: In a separate medium skillet over medium heat, warm a little olive oil and add sliced onions. Cook 5–8 minutes until they begin to brown, then reduce heat to low and continue stirring occasionally until they are soft and deeply browned, another 10–15 minutes. Remove from heat.
Note on timing: appliance heat levels vary; prep and cook times are estimates.

Tips & Variations
- Make smaller patties for sliders or adjust the recipe to yield more portions by dividing the mix into smaller pieces.
- Swap mozzarella for cheddar or blue cheese to change the flavor profile.
- If you prefer a juicier burger, choose ground beef with a bit more fat; for leaner burgers, use lean ground beef but be careful not to overcook.
- Serve on toasted brioche or whole-grain buns, or keep it bun-free with extra greens for a lighter plate.
