Homemade Roasted Vegetable and Tomato Pasta Sauce

I love quick, practical meals—especially with a small baby at home. If dinner is ready in 30 minutes, I consider it a win. If I can make a large batch of a core component that transforms into several different dishes, then I’ve truly saved time and stress. This roasted vegetable and tomato pasta sauce is one of those make-ahead lifesavers.

What’s in the pasta sauce?

At its core, this sauce is a sheet-pan of roasted vegetables combined with a bottle of tomato passata and a few basic seasonings. The passata is my speed-cooking secret because it’s already smooth and saucy, so it doesn’t need to reduce for a long time. The vegetables add sweetness and depth.

How to roast vegetables

Roasting concentrates the vegetables’ natural sweetness and gives the sauce a lightly caramelized flavor. It also softens everything so the sauce blends smoothly.

Steps:

  • Preheat the oven to 425°F (220°C).
  • Cut the bell peppers, zucchini and carrots into roughly equal pieces so they cook evenly. Quarter the onion and peel the garlic cloves.
  • Toss all the vegetables with olive oil, dried oregano, salt and black pepper.
  • Spread the vegetables in a single layer on a baking sheet and roast for about 30 minutes, until tender and lightly browned.

How to make the pasta sauce

Once the vegetables are roasted and slightly cooled, transfer them to a bowl and puree. I prefer using a hand blender so the sauce stays a bit chunky and textured; if you want a completely smooth sauce, use a countertop blender.

Mix in the tomato passata and taste for seasoning. This recipe yields about 5 to 6 cups of sauce—plenty to use right away and to freeze for later.

Storage tip: I normally use about 2 cups and freeze the rest in 1-cup portions using zip-top bags or mason jars. The sauce keeps well in the freezer for 3 to 4 months. If you freeze in jars, leave headroom for expansion; zip-top bags are usually easier to thaw.

What to use the pasta sauce on

This sauce works beautifully anywhere you’d use a tomato-based sauce. Ideas:

  • Stir it through any tomato-based pasta to boost vegetables and flavor.
  • Add 1 cup to a lasagna meat sauce for extra body and nutrition.
  • Use about 1 cup in a keema (minced meat) curry to add moisture and depth.
  • Use it as a simple marinara replacement—perfect for meatballs, baked pasta or as a dipping sauce.

I usually don’t simmer this sauce before storing because the passata provides a ready-to-use texture. When using it in a dish, I bring it up to a simmer with any additional ingredients—cream, chili flakes, or reserved pasta water—until the sauce reaches the desired consistency. Roasting gives the sauce a subtle sweetness; add chili flakes, extra salt and pepper to taste depending on how you plan to serve it.

  • 2 cups roasted vegetable and tomato pasta sauce
  • 2 tbsp olive oil
  • 1/2 cup full cream (or cream of choice)
  • 1 tsp red chili flakes (adjust to taste)
  • Salt to taste
  • Chopped parsley to garnish

Instructions — To make the pasta sauce

  1. Preheat the oven to 425°F (220°C).
  2. Place all cut vegetables and garlic in a large mixing bowl. Sprinkle with salt, black pepper and oregano. Drizzle with olive oil and toss to coat evenly.
  3. Spread the vegetables in a single layer on a baking sheet. Roast for about 30 minutes, until tender and lightly browned.
  4. Let the vegetables cool slightly. Transfer to a bowl and puree with a hand blender for a chunky texture, or use a countertop blender for a smooth sauce.
  5. Stir in the tomato passata and adjust seasoning. Use the sauce immediately or cool and refrigerate or freeze in portions.

Instructions — To make the pasta dish

  1. Cook the pasta according to package instructions. Drain and reserve about 1/2 cup of the pasta cooking water.
  2. Heat 2 tbsp olive oil in a pan, add the pasta sauce and chili flakes. Bring to a gentle boil, then lower the heat.
  3. Stir in the cream, combine, then add the cooked pasta. If the sauce is too thick, add reserved pasta water a little at a time until you reach the desired consistency.
  4. Taste and adjust seasoning with salt, pepper or more chili flakes. Garnish with chopped parsley and serve.

Notes

  • I freeze leftover sauce in 1-cup zip-top bags for easy thawing—dip the sealed bag in warm water for a few minutes or defrost in the microwave.
  • If you freeze in jars, always leave space at the top for expansion to avoid breakage.
  • This sauce is a flexible base: increase herbs, add olives or capers, or fold in cooked protein to make different meals.
