- 2 large eggs
- Salt and black pepper, to taste
- 2 Tablespoons mushrooms, sliced and sautéed
- 2 slices brie cheese
- ¼ cup avocado, chopped
- 1 Tablespoon butter
- 1 Tablespoon olive oil

- Crack the eggs into a small bowl, add a pinch of salt and pepper, and beat them until smooth with a fork.
- Slice or chop the mushrooms. Heat the olive oil and butter in a small frying pan over high heat, then add the mushrooms.
- Stir the mushrooms frequently until they turn golden. Reduce the heat to medium so the omelette cooks gently.
