This Instant Pot pumpkin risotto recipe delivers a creamy, luxurious finish with warm fall spices and a bright tang from goat cheese. It tastes like comfort and celebration at once, yet it doesn’t require constant stirring at the stove. A lightly caramelized roasted pumpkin garnish is optional but highly recommended for texture and added sweetness.

Why I love instant pot risotto
Oi, gente!
Risotto is one of those dishes that feels special but can demand a lot of hands-on time when made traditionally. Cooking it in an Instant Pot or similar pressure cooker simplifies the process without sacrificing texture or flavor. The method keeps the rice perfectly al dente while letting the starches create that classic creamy body. With a pressure cooker you still get the aromatics, wine, and finishing fat-and-cheese step that define a great risotto, but with less active stirring.
This version, with pumpkin and warm spices, is a favorite for fall. It works equally well as a starter in small portions, as a side, or as a cozy vegetarian main. The goat cheese at the end brightens the dish and adds a pleasant contrast to the sweet pumpkin notes.
Serve right away for the best texture—risotto is meant to be creamy and slightly loose, not dry or stiff. If you plan a small dinner, it’s a lovely option for an intimate date night in or a seasonal get-together.
Bom apetite!
What pumpkin you’ll need to make this pumpkin risotto

You can use a variety of pumpkins and winter squashes for this recipe. Choose a sweet, firm-fleshed variety that holds up when cooked:
- Butternut squash (a favorite for its sweetness and texture)
- Acorn squash
- Kabocha squash
- Red Kuri (Hokkaido) squash
- White pumpkin
- Sugar pie or other sweet pumpkins
Feel free to mix types if you like. The goal is a slightly sweet, smooth pumpkin component that melds well with the rice and spices.
How to make risotto in a pressure cooker
Making risotto in the Instant Pot follows the same flavor-building steps as the stovetop method, but uses pressure to hydrate the rice quickly. The key is to layer ingredients correctly and finish on sauté to reach the classic creamy finish.
Simple steps:
- Sauté aromatics in butter until fragrant.
- Toast (or pearl) the arborio rice briefly, then stir in the grated pumpkin.
- Add wine and reduce until the alcohol evaporates.
- Add spices, stock, and thyme, then pressure cook on high for a short time.
- Release pressure, return to sauté, remove whole herb sprigs and whole spices, and finish with butter and goat cheese to make the risotto creamy.

When the pressure cook cycle ends you’ll see more liquid than you want in the final dish. That’s intentional: you finish the risotto on sauté so the pot’s heat reduces the liquid quickly while releasing starches into a silky texture. This hybrid method — short time under pressure, then a few minutes sautéing — produces a reliably creamy risotto with minimal babysitting.

Remove whole thyme sprigs and any whole spices before finishing, then enrich with butter and goat cheese. Serve immediately for the best al dente bite and creamy consistency.
Now your risotto should be all creamy and delicious!
Once plated, top the risotto with a little extra crumbled goat cheese, cracked black pepper, and, if using, the roasted pumpkin garnish for contrast. This dish shines when eaten hot and fresh.

The roasted pumpkin garnish is optional but adds caramelized sweetness and texture. Instructions for roasting the garnish are included in the recipe card below.
