If you remember the Pumpkin Chiffon Pie I shared before Thanksgiving, I promised another family favorite. Today I’m sharing that recipe — Chocolate Chiffon Pie. This has been in our family for as long as I can remember and is now being enjoyed by a third generation.

This pie is fluffy, creamy, and full of little chocolate flecks. Each bite is like a flaky crust filled with chocolate chip mousse — rich, yet feather-light. It’s not difficult to make, though the method can seem intimidating at first. Follow a few key steps and you’ll have a reliable crowd-pleaser that will likely become a holiday staple in your home.
How To Make Chocolate Chiffon Pie
You will need one baked 9-inch pie shell. If you don’t have a crust ready, use your favorite single pie crust recipe—this pie uses only one crust, so halve any double-crust recipe.
How To Make Chocolate Chiffon Pie Filling
In a medium saucepan combine 1 cup milk, 1 envelope unflavored gelatin, 1 cup granulated sugar, and 2 (1 oz) squares unsweetened chocolate, cut into small pieces. Cook over medium-low heat, stirring continuously, until the sugar dissolves and the chocolate flecks have melted into the milk. The mixture will be flecked with chocolate — that’s what gives the chiffon its texture and charm.

When the sugar has dissolved and the chocolate has integrated with the milk, pour the mixture into a heatproof ceramic or glass bowl. This will become the chilled base you fold into whipped cream.

Chilling Chocolate Chiffon Pie Filling Base
Place the warm mixture in the refrigerator to chill until it reaches a soft-set stage — like a thick pudding that will mound slightly when stirred. Be patient: rushing or freezing the base can prevent proper setting and change the texture.
Tips for making Chocolate Chiffon Pie
- Use exact ingredient measurements. The balance of milk, gelatin, sugar, and chocolate is important for the filling to set correctly.
- Allow the base to set slowly in the refrigerator. Do not use the freezer to speed this up — gelatin needs a gentle chill to reach the right texture.
- Whip the cream to stiff peaks before folding in the chocolate base. Stiff peaks ensure the filling is light and stable; under-whipped cream will make the filling runny.
- Fold gently. Use a spatula and fold the chilled chocolate base into the whipped cream to preserve air and texture.
Tip: Leaving the stirring spoon in the bowl while it chills makes stirring easier when you check the mixture.

When the chocolate-gelatin mixture is soft set, whip 2 cups heavy whipping cream until stiff peaks form. Pour the chilled chocolate base into the bowl with the whipped cream and gently fold until evenly blended and smooth. Once blended, pile the filling into the cooled pie shell and smooth the top. Chill the pie for at least 6 hours or overnight. The longer it chills, the firmer and more sliceable it becomes.

Ingredients

- 2 cups heavy whipping cream
- 1 – 9 inch baked pie crust

- Whip the heavy cream to stiff peaks.
